Polysorbates undergo degradation by auto-oxidation, producing reactive peroxides, in addition to hydrolysis. Exposure to light of polysorbate 80 aqueous solution leads autoxidation of the alkyl polyoxyethylene chain leading to the production of hydroperoxide derivatives.
